High-Protein Cookie Dough Bites

A recipe from my best friend @healthyeasytasty.kitchen that I loved so much I made it twice in one week. No-bake bites with Greek yogurt, peanut butter and oat flour — 16g of protein per serving, ready in 2 minutes.

Ingredients

Servings:4
  • 120 g full-fat Greek yogurt (½ cup)
  • 2 tbsp peanut butter
  • 1 ½ tbsp honey
  • ½ tbsp maple syrup (or extra honey)
  • 25 g vanilla protein powder (¼ cup)
  • 90 g oat flour (or almond flour — both work)
  • ½ tsp vanilla extract
  • 1 pinch of salt
  • 3 tbsp mini chocolate chips

Method

  1. 1

Combine the Greek yogurt, peanut butter, honey and maple syrup in a bowl. Stir until smooth.

  2. 2

Add the protein powder, oat flour, vanilla extract and salt. Mix until a thick, cookie-dough texture forms. If it feels too soft, add a little more oat flour one tablespoon at a time.

  3. 3

    Fold in the chocolate chips.

  4. 4

Roll into small balls (about 1 heaped tablespoon each — makes roughly 12). Place on a plate and press a few extra chocolate chips on top.

  5. 5

Refrigerate for 10–15 minutes for a firmer texture. Store in the fridge for up to 4 days — if they last that long. Freezer tip: they're even better frozen. Pop them in a freezer-safe container and eat straight from frozen — the texture becomes almost ice-cream-like.
